As much as I played on the ps2, I don't really remember playing any games on it except fighting games, lol. But I'd have to say that ICO is probably the single best game to play.
 
Dragon Quest 8. (Though this is kinda a depending on your tastes thing. Probably the best looking DQ game ever made.)
