Two different answers depending on the situation.

If I'm the only one who is immortal/locked into an age, I'd definitely pick in the 25-30 range. Young, still in your physical prime, yet old enough to be respected as a full fledged adult while young enough to not be considered old.

If everybody gets to pick an age to remain as, then I'd probably go with 20-22, because people wouldn't assume you were still mentally/emotionally immature, as there'd be millions of 45 year old 20 year olds, so to speak, and appearance would no longer be an immediate indicator of age. At that point, might as well just pick the age where you're healthiest, youngest and most attractive

I'd pick the 18-24 range (specifically 24 or 25). Young and still in physical prime, able to legally drink, drive, and demote (or vote as it is also commonly called). By that age you can be done with both a BA and an MA in college and have pretty good career options available. You are not considered college material at 24 and that's the age that people begin to respect your opinion and see you as an adult. At this age you often have gotten out of the awkward stage of the teenage years as well as the awkward stage of college which tends to be the time frame of people making their biggest mistakes. you will have been able to gain a lot of knowledge by this age and the only thing really lacking is experience which one will get if they merely stay immortal...in mind you will be older. In all picking an age is not all that bad...even a kid of 12 can be all knowing and all powerful if they retain all knowledge of a past life. 24 though because one no longer has to deal with the awkward stages of life and you more or less have most of your liberties by this time.
