The advantage/disadvantage frames, or the difference between each character's recovery time from hit or block stun, and the execution frames, or the time it takes for an attack to start (attack speed), determine what beats what in any given situation.
The stuff you learn from the numbers is pretty intuitive with experience though, so players can get by without knowing the numbers. But some situations can benefit you to have specific knowledge, for example, Asta can't interrupt 2K into a fast FC 2A. 2Ks are -2 on hit, fast FC 2As are i12. Asta's fastest non-high interrupt, his i15 2K (2A will go under 6A) is just 1 frame too slow to beat out an i12 move at +2, which will come out at i14.
