Dead or Alive 5 Ultimate

I liked the way DOA4 online mode was setup. You always had to watch out for your points and it didn't separate the pool of players.
 
Starting character?Begin with Kas or not ?
Not necessary true.If you dont have too much time to play...You should focus on 3 characters at the beginning...Pick up one of the ninjas Kasumi and Hayate for example,the more understable styles i think and choose one character that you really like.If you only play Kasumi you will end up like most of those Kilik or Mitsurugi noobs that you could find online on the first months of Soul Calibur 4.But as someone said before take one of those easy characters to consolidate your basis.
I think there are characters with more complicated martial arts and therefore more potential.I was looking at one of the videos of Drdogg and i am pretty sure now that he is not maining a "team ninja"(Kas,Hayate,Hayabusa,or Ayane).
Moreover take a look at all the Doa5 tournaments (youtube).Kas players become really predictable.There were a lot of people maining her in doa3 and U .I dont think she has changed that much.I believe Kayane switched from Kasu to Kokoro...And i dont exactly remember wheter it is the case for swoozie(Two very good Kas players....At the end you should decide.
 
About sidestepping.Have a closer look,at a certain range it only makes sense to sidestep in order to interrupt a string or a "heavy"blow.But some strings are faster than others

As far as I am aware. Hayate isn't exactly a beginner character for people new to Dead or Alive. If you're looking for a beginner friendly character, Kasumi, Hitomi, Jann Lee, Eliot, and Kokoro tend to be the easier characters to learn.
 
You want more replay value for your fighting game, go to local events, casuals, tournaments, etc.

IMO, one of the best things about the genre and it's community is that it still emphasizes face-to-face interaction to this very day. Heck, someone from UCLA actually wrote a paper praising this.

That's not often very practical, you know that. It's never impossible, but it's often not very practical at all either. That's like taking online play out of Battlefield 3 that supports 32 player LAN to encourage face to face interaction....

Regardless, I understand where you're coming from as well, but simply put, some people just don't have the skills for that and are too competitive at the same time. But, personally, I've always praised DOA because it has more total content than any 3D fighter I tend to play.

I sorta wish the side step was like SCV (without the use of a button) it would be even sweeter and faster to use..

3 Buttons + Direction is as fast as you need, a non-double tap makes it mashable, you'll get used to it.

whats the default? Surely everyone will want to step with 22.

Not on pad. Plenty of us will map H+P+K to one button and have a lot more reaction time than pressing 22.
