The longer it takes to kill stuff the more enemies you have so you don't have to worry about running around trying to extend you combo. It makes sense to me.

It depends on the move. Certain moves have a stun on Normal Hit like Phyrra's stab. Other moves only stun on Counter Hit like Leixia's 1A. You just have to either go through your characters movelist on normal hit and counter hit to see how properties change or stay the same between the different...

To assassinate on the move just keep holding forward while you hold own X/Square. Attacking on the move I have never heard of.
