This is exactly what I was thinking. The falchions already do good bleed damage so the only thing I'd want to put on is poison, but it's not worth the decrease in dex scaling.

I'm in the final stretches of the game right now. Finalized my pvp build as well, it's a dex build using dual +10 Falchions, with power stance (Cervantes up in this bitch.) Not sure if I want to infuse them or not. Here's a picture of the Drangleic set minus the helm. I've been wearing it...

Picked up Dark Souls II and Bravely Default today. I think it's pretty safe to say I won't be playing much SCV for a while.
