What's the difference between the idols you collect? Like if I gave the blacksmith the bronze idol would he sell less quality weapons that if I were to give him the gold or silver?

The lesser idols unlock fewer items in the shop. It won't matter at the end of your playthrough though since he'll be selling better items than the ones you get from the idols.

What about Madeline? Same thing as the Blacksmith?

She mostly sells chick stuff. Female only armor, lacy under wear, lady's boots, scented candles. I've seen a mage or two shopping in there. Allegedly for their girlfriends, wives and female pawns. Though she does sell "wands" and "magical rods". Sounds fishy to me.
