I can't figure out who I want to play because it's hard to see what makes the characters meaningfully different from each other in this game. Not saying they aren't, but it's much less obvious than say SCV or a 2D game. That said I have never really played much DOA so it's not a very informed viewpoint lol.

It's difficult to say, as they've actively admitted to changing things up in this iteration. In DOA4, they tried a more homogeneous approach to character diversity where anyone could pick up another character easily. However, they're looking like they're going back to a more DOA3.1/3.2 style of diversity in this iteration.

If that's the case, what's your preferred style of play as that would be easier to suggest a character?

For example, in DOA3.1 I could say the following summaries for you:

Ayane: Evasive character, Fast attacks, Decent juggle damage, Positional reliant, unsafe
Bass: Punishment character, Extreme punishment damage, Large hurt box, Slow attacks, Can work you into the environment, Pressure from grappling
Bayman: High Defensive hold damage, Slow attacks, Throw punishment, not so good at wall damage
Gen Fu: Amazing at Defense and Offense, evasive attacks with good damage, can get nice juggle damage and wall pressure, has advanced parries that can provide guaranteed hit setups, good natural combos, quick attacks
Hayabusa: Evasive character, Good Throw and hold punishment, some guard break setups, decent natural combos, rather fast attacks with moderate evasion.
Hayate: Rush character, attacks have good priority, plenty of natural combos granting lots of damage, moderate speed attacks, and good juggle damage
Helena: Evasion character, stance based, low juggle game
Hitomi: Rush character, high damage with good mixups but mostly unsafe attack strings, decent juggle damage with better than moderate attack speeds, excels at the wall game
Jann Lee: Rush character, Amazing Wall Damage and pressure, Nice juggle damage, Defensive hold setups, can push to wall easily, quick attacks with quick mids
Kasumi: Extreme poking character, Fast attacks, not as evasive as Ayane, plays more mix-up and mindgames with high damage
Lei-Fang: Positional changing defensive holder, medium speed attacks, faster grapple speeds with combo throws that grant advantage, positional changing throws, good throw damage
Leon: Mix of Punishment and Rush character, High Throw Damage, Guard breaker, frame advantage setups, Slow attacks so needs a bit of space to get in.

That's about all I can think of off the top of my head.
